Garlic scapes have a delicate flavor and aroma that will delight the senses. They are an aromatic herb and vegetable that knows no bounds. They have a curly green natural shape, a bud at the tip, and they even produce a flower. There are many ways used to cook garlic scapes and make a great meal out of them. Preparing garlic scapes
Garlic scapes are tender at the stalk, but the bud contains some fibers. To retain a smooth consistency, the bud may be cut out. If you want to sauté the scapes, you may leave the bud and have it whole. Preparing the scapes can be done in different ways. They are used to cook pizzas, bread, soups, pastas and much more. If you need to use the scapes for soup then half inch sized cuttings for the perfect sauté.
There are many dishes that can be prepared using scapes. Just like garlic may be used in most dishes the same applied for the scapes. However, with the special ways of making scapes, here are some of the recipes made with scapes.
Chicken Pizza scape
- Garlic scapes, can be whole, chopped or blended.
- Pre-cooked chicken
- Ranch salad dressing
- Softened Cheese block, 1 block
Bake the pizza crust, and mix your vegetables with the ranch dressing, and the cheese. Add salt and pepper to taste. Spread through the crust, and add chicken and the scapes on top. Bake till ready.
- Sauté scapes
- Olive oil, 1 tbsp.
- Brown sugar, 1 tbsp.
- Trimmed scapes, 4 OZ
- ½ cup dry wine
- ½ tbsp. salt
- ½ tbsp. Pepper
- Chopped parsley
- Diced and grilled cheese
In a sauce pan, heat oil and add sugar. Keep stirring for 2-3 minutes then add the scapes wen the sugar is caramelized then cover. Turn to medium heat then sauté for about 3 minutes, then add the wine and tomatoes, stir and cover. Cook under low heat for 5-6 minutes, and keep checking the scapes till they are tender. Do not wait till they are soft. Add in the parsley, seasoning and cheese. Best served while warm.
Grilled garlic scapes
Place the scapes in foil paper, wrap them in with some bit of olive oil. Grill till its tender and add seasoning.
Buying scapes in bulk and storing them can be convenient for times when you want to fix a meal quickly. They can be best stored in the refrigerator, in a paper bag. With this kind of storage, they can last for a month. Frozen scapes will last you longer, but you need to have them blanched. Do not store them this way for a longer time, as they may lose the garlic flavor. When buying the scapes, ensure that you choose long curly and green scapes. They may be available in a market near you, or a grocery store.
